No beef, no problem — here's what actually goes into a good plant-based patty, and how BB52 builds its own.
Vegan patties are usually built from a plant base — mushroom, quinoa, legumes or protein blends — held together with binders and seasoned for savoury, umami depth. BB52's own vegan options are a mushroom-based Earth Burger and a quinoa-based Basic Not So Basic.
A good vegan burger patty isn't just "no meat" — it's built with the same intention as a beef patty: the right base, the right binder, and seasoning that creates real savoury depth instead of just filling a bun.
The same principles that make a beef patty good still apply: enough moisture so it doesn't dry out, a binder that holds it together without turning gummy, and seasoning that builds flavour rather than masking blandness. A vegan patty that skips these basics ends up tasting like a vegetable puck — the good ones don't.
