Burger school
Forget giant towers and gimmicks. A genuinely great burger comes down to a handful of fundamentals done well. Here's what actually matters.
A great burger is about balance and quality basics, not size or toppings. You need a juicy, well-seared patty (around 80/20 fat), a soft fresh bun that holds together, properly melted cheese, a balanced sauce, and at least one sharp element for contrast. When those are right, you don't need anything else.
The best burgers are rarely the biggest or the most loaded. They're the ones where every part is good and nothing fights anything else. Here's the checklist.
Quality beef at around 80/20 fat, seasoned properly, with a real browned crust for flavour. Whether smashed or classic, the patty is the foundation — get it dry or bland and nothing saves it.
Soft, fresh, lightly toasted, sturdy enough to survive the juices. A great bun (ideally made in-house) is half the experience; a stale, dense one ruins good beef.
BB52 was built to do a common thing — burgers — uncommonly well: house-made buns, Australian beef, in-house sauces and pickles. "Quality over quantity" isn't a slogan, it's the build. See the menu →
