If you've ever bitten into a burger with crackly, lace-thin brown edges and wondered how they did that — that's a smash burger. Here's the whole story, no jargon.
A smash burger is a loose ball of beef pressed hard and flat onto a very hot griddle the moment it hits the surface. That contact creates a deeply browned, crispy, lacy crust on one side while the inside stays juicy. It's thinner than a pub burger and it's all about that crust.
Here's the simplest way to picture it. Take a golf-ball-sized lump of beef — don't shape it, don't fuss with it — drop it onto a flat-top griddle that's properly ripping hot, and press it down hard for about ten seconds with a sturdy spatula. The patty spreads thin and the edges go ragged. Those ragged, thin edges are the whole point: they brown fast and turn crispy, almost like the burnt-cheese frico bits people fight over.
That browning has a name — the Maillard reaction. It's the same chemistry that makes toast taste like toast and steak taste like steak. The hotter and more direct the contact, the more of it you get. A thick burger sits up off the grill; a smashed one is pressed flat against the metal, so nearly the whole bottom face caramelises. More crust, more flavour. Simple.
The classic backyard burger is thick, often grilled over flame, and aims for a juicy, steak-like centre. A smash burger goes the other way — thinner, cooked fast and hot on flat steel, built around crust and savoury depth rather than a pink middle. Neither is "better" in a vacuum (we'll get to that), they're just after different things.
One quiet trick: because each patty is thin, two thin smashed patties give you double the crispy crust without the burger turning into a jaw-unhinging monster. That's why so many smash burgers come as doubles.
