Wagyu burgers cost more and sound luxurious. But what's the actual difference in the patty, and is it worth it? Here's the straight answer.

Short answer

A Wagyu burger uses beef from Wagyu cattle, prized for intense, soft marbling, while a regular burger uses standard beef like chuck. The difference is fat: Wagyu is far richer and more tender, but that very-soft fat can melt out fast and make a burger greasy and loose. For most burgers, well-chosen regular beef performs better.

"Wagyu" gets used loosely on menus, but the core difference is real: it's a breed of cattle bred for extraordinary marbling.

What Wagyu is

Wagyu (and Wagyu-blends) carry fine threads of soft, low-melting fat through the muscle. As a steak it's spectacular — buttery and tender. Ground into a patty, that fat content is very high.

What that means in a burger

  • Richer, more tender — undeniably luxurious mouthfeel.
  • But greasier & looser — the soft fat renders fast and can make the patty fall apart or sit heavy.
