Salt is simple. When you add it is not. The timing of seasoning changes the texture, moisture, and crust of a burger patty in ways that are both scientifically significant and practically noticeable.
The safest approach: season the patty immediately before it hits the griddle. Salting 10–40 minutes ahead draws moisture to the surface without time for re-absorption, which inhibits the Maillard reaction and produces a steamed rather than seared result. Season just before cooking, or salt at least 45 minutes ahead — never in between.
Salt is the most important seasoning in any kitchen — but in burger cooking, when you add it matters as much as how much you add. The timing of salt application affects the texture, moisture, and crust of the patty in ways that are both chemically significant and practically noticeable.

There are two defensible approaches to salting a burger patty, and they produce noticeably different results:
Applying salt directly to the exterior of the formed patty immediately before it goes on the griddle prevents significant osmosis from occurring before cooking. The salt stays on the surface, seasons the exterior, and contributes directly to the Maillard crust — salt accelerates browning by drawing a small amount of surface moisture which then evaporates quickly on a hot griddle, concentrating flavour compounds on the surface.
This approach preserves the loose, open texture of the grind, which is generally preferred in a craft burger context. The patty retains its lightness and does not compact into a dense sausage-like disc.
If salt is applied well in advance — at least 45 minutes before cooking — the moisture drawn to the surface by osmosis has time to re-absorb into the meat, carrying the dissolved salt with it. This produces a more evenly seasoned patty throughout its interior rather than just on the exterior surface.
The trade-off is textural: the extended salt contact dissolves some myosin, producing a patty that holds together more firmly and is less crumbly. Whether this is desirable depends on the thickness of the patty and the desired eating texture. For thicker patties (150g+), deeper seasoning can be worthwhile. For thinner patties designed for a more delicate texture, it tends to be counterproductive.
The worst outcome occurs when salt is applied 10–40 minutes before cooking. In this window, osmosis has drawn significant moisture to the surface — visibly visible as small droplets — but not enough time has passed for that moisture to re-absorb. Cooking at this point means that moisture has already been pulled from the meat and the patty goes onto the griddle wet, which inhibits the Maillard reaction and produces a steamed rather than seared result.
A standard seasoning level for a burger patty is approximately 1% salt by weight — so for a 130g patty, roughly 1.3g of salt (about a quarter teaspoon of fine salt). Season both faces of the patty and apply immediately before cooking for best results.
Kosher or sea salt is preferred over fine table salt in most craft kitchens because the coarser grain gives more control over application and does not include the additives present in iodised table salt that can introduce off-notes at high heat.
