What Makes a Great Burger?

Forget giant towers and gimmicks. A genuinely great burger comes down to a handful of fundamentals done well. Here's what actually matters.

Short answer

A great burger is about balance and quality basics, not size or toppings. You need a juicy, well-seared patty (around 80/20 fat), a soft fresh bun that holds together, properly melted cheese, a balanced sauce, and at least one sharp element for contrast. When those are right, you don't need anything else.

The best burgers are rarely the biggest or the most loaded. They're the ones where every part is good and nothing fights anything else. Here's the checklist.

Juicy, seasoned, seared beef

Quality beef at around 80/20 fat, seasoned properly, with a real browned crust for flavour. Whether smashed or classic, the patty is the foundation — get it dry or bland and nothing saves it.

A bun that pulls its weight

Soft, fresh, lightly toasted, sturdy enough to survive the juices. A great bun (ideally made in-house) is half the experience; a stale, dense one ruins good beef.

Melt, sauce, contrast

  • Cheese melted glossy into the patty, not a cold square on top.
  • Sauce balanced — rich with a little acid — applied with restraint.
  • Contrast from pickles or onion to cut the richness and keep every bite interesting.
Our whole philosophy

BB52 was built to do a common thing — burgers — uncommonly well: house-made buns, Australian beef, in-house sauces and pickles. "Quality over quantity" isn't a slogan, it's the build. See the menu →

Frequently asked

What is the most important part of a burger?
The beef and the bun. A juicy, well-seared patty at around 80/20 fat on a soft, fresh bun is the foundation — everything else (cheese, sauce, toppings) builds on those two.
Do more toppings make a better burger?
No. The best burgers are balanced, not overloaded. Too many toppings unbalance the burger and hide the beef. A few quality elements that work together beat a tall stack.
What makes BB52 burgers different?
House-made buns from our own bakery, Australian beef, and in-house pickles and sauces — the fundamentals done properly, which is why BB52 was voted Bali's #1 burger.
